Coconut Chia Mango Popsicles

Instructions
- Whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl.
- Refrigerate the mixture for 30 minutes until completely chilled.
- Add the mango to a food processor and pulse several times to make a creamy puree.
- Fill the molds of a popsicle maker by alternating the mango puree and coconut chia mixture.
- Insert the popsicle sticks and freeze for at least 2 hours.
- Once firm, remove the popsicles from the mold and enjoy.
