Thai Tea Coconut Popsicles

Instructions
- Steep the Thai tea in hot water and strain it into a bowl.
- Stir in 1/3 cup of sugar until dissolved while the tea is warm.
- In a saucepan, heat half of the coconut milk and mix in ¼ cup of sugar until dissolved.
- Combine the heated coconut milk with the remaining coconut milk and chill both the coconut milk and sweetened tea for 30 minutes to 1 hour.
- Fill popsicle molds ¾ of the way with Thai tea and top with sweetened coconut milk.
- Freeze for at least 4 hours or overnight, then run the molds under warm water to release the popsicles.
