Ingredients

The sauce

  • 4 Tbsp balsamic vinegar
  • Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 2 cloves garlic, minced
  • ¼ tsp dried thyme

The chicken

  • 4 pieces boneless, skinless chicken thighs (about 1.25 lbs. total)
  • 1 pinch salt and pepper
  • 1 Tbsp olive oil

The mushrooms

  • 8 oz mushrooms

The finishing touch

  • 2 Tbsp butter

Instructions

  1. Prepare the balsamic sauce by mixing balsamic vinegar, soy sauce, brown sugar, minced garlic, and dried thyme in a small bowl.
  2. Season the chicken thighs with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium heat and add the chicken thighs, cooking until browned and cooked through.
  4. Remove the chicken from the skillet and keep warm.
  5. Clean and slice the mushrooms in half, then add them to the skillet and sauté until tender and browned.
  6. Lower the heat and add the balsamic sauce to the skillet, stirring to dissolve browned bits.
  7. Simmer the sauce with the mushrooms until it reduces by half.
  8. Stir in the butter until melted, then add the chicken back to the skillet, coating it in the sauce.
  9. Serve hot, drizzling the pan sauce over the chicken and mushrooms.
