Instructions
- Prepare the balsamic sauce by mixing balsamic vinegar, soy sauce, brown sugar, minced garlic, and dried thyme in a small bowl.
- Season the chicken thighs with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat and add the chicken thighs, cooking until browned and cooked through.
- Remove the chicken from the skillet and keep warm.
- Clean and slice the mushrooms in half, then add them to the skillet and sauté until tender and browned.
- Lower the heat and add the balsamic sauce to the skillet, stirring to dissolve browned bits.
- Simmer the sauce with the mushrooms until it reduces by half.
- Stir in the butter until melted, then add the chicken back to the skillet, coating it in the sauce.
- Serve hot, drizzling the pan sauce over the chicken and mushrooms.
