Ingredients

The asparagus

  • 1 pound asparagus spears, trimmed

The topping

  • cup Panko or breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • 2 teaspoons lemon rind, grated
  • 1 teaspoon canola oil
  • ½ teaspoon black pepper
  • ¼ teaspoon kosher salt
  • 2 tablespoons lemon juice
  • 1 teaspoon unsalted butter, melted

For cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine Panko (or breadcrumbs), Parmesan cheese, lemon rind, canola oil, pepper, and salt.
  3. Arrange the asparagus on a foil-lined baking sheet and bake for 8 minutes.
  4. Sprinkle the breadcrumb mixture over the asparagus and bake for an additional 4 minutes.
  5. Remove from the oven and drizzle with lemon juice and melted butter.
