Roasted Parmesan Asparagus

Ingredients

The asparagus

  • 1 ½ - 2 lbs asparagus

The seasoning and oil

  • 2 Tbsp olive oil
  • 1 Tbsp minced garlic
  • to taste salt
  • to taste black pepper

The cheese

  • ½ cup finely shredded parmesan cheese

For serving

  • lemon wedges

Instructions

  1. Preheat the oven to 400°F.
  2. Mix garlic and olive oil in a small bowl, pressing garlic to infuse the oil.
  3. Place asparagus on a baking sheet and drizzle with the garlic oil mixture, tossing to coat.
  4. Spread asparagus in a single layer on the baking sheet and sprinkle with salt and pepper.
  5. Roast in the oven for about 15 minutes until tender.
  6. Remove from the oven, sprinkle parmesan cheese on top, and return to the oven for 1 more minute to melt the cheese.
  7. Serve immediately with lemon wedges.
