Oven Roasted Asparagus

Ingredients

The asparagus

  • 1 lb. asparagus

The seasoning

  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup grated parmesan cheese
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 425ºF and prepare a baking sheet with nonstick cooking spray.
  2. Snap off the woody ends of the asparagus.
  3. Place the asparagus on the baking sheet and drizzle with olive oil, then toss to coat.
  4. Season the asparagus with salt and pepper, and toss again.
  5. Sprinkle half of the grated parmesan cheese and lemon zest over the asparagus, then toss once more.
  6. Roast the asparagus for 8 minutes, then remove from the oven, sprinkle on the remaining parmesan cheese, and toss.
  7. Return to the oven and bake for an additional 2-4 minutes, depending on the thickness of the asparagus.
  8. Serve with additional lemon zest and cracked pepper.
