Oven Roasted Asparagus

Instructions
- Preheat the oven to 425ºF and prepare a baking sheet with nonstick cooking spray.
- Snap off the woody ends of the asparagus.
- Place the asparagus on the baking sheet and drizzle with olive oil, then toss to coat.
- Season the asparagus with salt and pepper, and toss again.
- Sprinkle half of the grated parmesan cheese and lemon zest over the asparagus, then toss once more.
- Roast the asparagus for 8 minutes, then remove from the oven, sprinkle on the remaining parmesan cheese, and toss.
- Return to the oven and bake for an additional 2-4 minutes, depending on the thickness of the asparagus.
- Serve with additional lemon zest and cracked pepper.
