Perfect Roasted Asparagus

Ingredients

Basic roasted asparagus

  • 1 large bunch fresh asparagus
  • 1 to 2 teaspoons olive oil
  • to taste salt
  • to taste freshly ground black pepper

Optional seasonings

  • ½ medium lemon (zest and juice)
  • ½ medium lemon (wedges from the remaining lemon)
  • to taste finely grated Parmesan cheese
  • small handful fresh mint or parsley (finely chopped)
  • light sprinkle red pepper flakes
  • 1 to 2 pat butter
  • light drizzle balsamic reduction or thick balsamic vinegar
  • to taste toasted sliced almonds

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Snap off the woody ends of the asparagus and discard them.
  3. Place the asparagus on the sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  4. Arrange the asparagus in a single layer on the pan.
  5. Bake until the asparagus is easily pierced with a fork, about 9 to 12 minutes for thin asparagus and 15 to 20 minutes for thicker ones.
  6. Transfer to a serving platter and season as desired with lemon juice, Parmesan, butter, or balsamic vinegar.
  7. Serve immediately or store at room temperature for up to 1 hour or in the refrigerator for up to 4 days.
