Roasted Asparagus with Balsamic & Parmesan

Ingredients

The asparagus

  • 1 lb asparagus spears

The seasoning

  • 2 tablespoons olive oil
  • to taste salt
  • to taste freshly cracked black pepper

The garnish

  • 1 tablespoon syrupy balsamic vinegar
  • to taste Parmigiano Reggiano

Instructions

  1. Preheat the oven to 425ºF.
  2. Snap off the ends of the asparagus and cut the spears in half.
  3. Transfer the asparagus to a baking dish or sheet pan.
  4. Drizzle with olive oil and season with salt and pepper, tossing to coat.
  5. Roast in the oven for 20-25 minutes until the tips begin to char.
  6. Transfer to a serving platter and adjust seasoning if needed.
  7. Shave Parmesan over the asparagus and drizzle with balsamic vinegar.
