Ingredients

The marinade

  • ¼ cup mayonnaise
  • ¼ cup avocado oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper

The chicken

  • 2 pounds boneless skinless chicken breast

Instructions

  1. Combine mayonnaise, avocado oil, Dijon mustard, soy sauce, thyme, salt, pepper, and cayenne in a bowl to make the marinade.
  2. Place chicken in a shallow dish or zip-top bag and marinate in the refrigerator for at least four hours.
  3. Remove chicken from the marinade and discard excess marinade.
  4. Heat the griddle to medium (about 350°F) and drizzle oil on the surface.
  5. Cook chicken for 7 minutes, then flip and cook for an additional 7 to 10 minutes until the internal temperature reaches 160°F.
  6. Transfer chicken to a plate, tent with foil, and allow to rest for 5 to 10 minutes before serving.
