The chicken

Instructions
- Combine mayonnaise, avocado oil, Dijon mustard, soy sauce, thyme, salt, pepper, and cayenne in a bowl to make the marinade.
- Place chicken in a shallow dish or zip-top bag and marinate in the refrigerator for at least four hours.
- Remove chicken from the marinade and discard excess marinade.
- Heat the griddle to medium (about 350°F) and drizzle oil on the surface.
- Cook chicken for 7 minutes, then flip and cook for an additional 7 to 10 minutes until the internal temperature reaches 160°F.
- Transfer chicken to a plate, tent with foil, and allow to rest for 5 to 10 minutes before serving.
