Chicken Pizzaiola

Ingredients

The Chicken

  • 4 pieces boneless skinless chicken breasts (about 6 ounces each)
  • 3 cups spaghetti sauce
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded Mozzarella
  • 2 ounces sliced pepperoni

The Pasta

  • 8 ounces spaghetti

Instructions

  1. Preheat the oven to 450 degrees.
  2. Spread the spaghetti sauce in a 9x13 baking dish.
  3. Coat the chicken breasts with salt, pepper, and Parmesan, then place them on top of the sauce.
  4. Bake the chicken for 15 minutes.
  5. Sprinkle Mozzarella and pepperoni over the chicken and increase the oven temperature to 475 degrees.
  6. Continue baking until the cheese melts, about 5 minutes.
  7. Meanwhile, boil 4 quarts of water in a large pot.
  8. Add spaghetti and 1 tablespoon of salt, cooking until al dente.
  9. Reserve ½ cup of the cooking water, then drain the spaghetti and return it to the pot.
  10. Combine some sauce from the baking dish with the spaghetti, adding reserved water as needed.
  11. Serve the spaghetti with the chicken and remaining sauce.
