Ingredients

The steak

  • 2 steaks Filet Mignon (6 oz each)
  • 1 tablespoon Olive oil (divided)
  • to taste Salt & pepper

The vegetables

  • 1 tablespoon Olive oil
  • ½ bell pepper Red (cut into strips)
  • ½ bell pepper Green (cut into strips)
  • ¼ cup Onion (thinly sliced)
  • 4 oz Sliced mushrooms
  • 2 tablespoons Dry white wine
  • ¼ teaspoon Fresh thyme leaves

The garlic parmesan butter

  • 2 oz Unsalted butter (softened)
  • 2 oz Parmesan cheese (finely grated)
  • ¼ teaspoon Raw garlic (grated)

The sauce

  • ½ cup Rao's Arrabiatta Sauce (or any low carb sauce)

Instructions

  1. Let the steaks come to room temperature for 30 minutes and prepare the vegetables.
  2. Make the Garlic Parmesan Butter by mixing softened butter, grated Parmesan cheese, and grated garlic, then refrigerate.
  3. Preheat the oven to 375°F.
  4. Rub the steaks with olive oil, season with salt and pepper, and sear in a hot oven-safe frying pan for 1½ to 2 minutes on each side.
  5. Insert a meat thermometer into one steak, then place the pan in the oven to finish cooking.
  6. In the same pan, sauté onions and peppers in olive oil for 2-3 minutes, then add wine and mushrooms, cooking for an additional 2-3 minutes.
  7. Add fresh thyme to the vegetables and remove them to a serving dish.
  8. Warm the red sauce in the pan to pick up residual flavors.
  9. Plate the dish by dividing the sauce between two plates, placing the steaks in the center, topping with garlic parmesan butter, and serving with the sautéed vegetables.
