Ingredients

Grain Free Flatbread

  • ¼ cup ghee, melted
  • ¼ cup water
  • 2 units eggs
  • 1 bag Bob's Red Mill Grain Flatbread Mix

Creamy Gorgonzola Yogurt Sauce

  • ½ cup plain Greek yogurt
  • ½ tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon fresh rosemary
  • cup crumbled gorgonzola cheese
  • to taste salt & pepper

Toppings

  • 6 oz filet mignon
  • to taste salt & pepper
  • 2 tablespoons ghee
  • cups fresh arugula
  • ¼ cup pickled onions
  • optional grated parmesan

Instructions

  1. Make the Gorgonzola Sauce by mixing yogurt, lemon juice, garlic, rosemary, gorgonzola, salt, and pepper in a bowl.
  2. Preheat the oven to 400°F and prepare a baking sheet with cooking oil.
  3. In a bowl, combine melted ghee, water, eggs, and flatbread mix. Let it rest for 5 minutes.
  4. Spread the mixture on the baking sheet to form a 10" round pizza crust, crimp the edges, and brush with olive oil. Bake for 10 minutes.
  5. Preheat the oven to 415°F. Season the filet mignon with salt and pepper, then sear in a hot skillet with ghee for 2 minutes on each side.
  6. Transfer the skillet to the oven and bake the steak for 5-6 minutes for medium rare. Let it rest for 5-10 minutes.
  7. Spread the Gorgonzola Sauce over the baked flatbread, leaving a 1" border. Bake for an additional 5-7 minutes until bubbly.
  8. Top the pizza with arugula, sliced filet mignon, and pickled onions. Optionally, garnish with grated parmesan and serve.
