Instructions
- Make the Gorgonzola Sauce by mixing yogurt, lemon juice, garlic, rosemary, gorgonzola, salt, and pepper in a bowl.
- Preheat the oven to 400°F and prepare a baking sheet with cooking oil.
- In a bowl, combine melted ghee, water, eggs, and flatbread mix. Let it rest for 5 minutes.
- Spread the mixture on the baking sheet to form a 10" round pizza crust, crimp the edges, and brush with olive oil. Bake for 10 minutes.
- Preheat the oven to 415°F. Season the filet mignon with salt and pepper, then sear in a hot skillet with ghee for 2 minutes on each side.
- Transfer the skillet to the oven and bake the steak for 5-6 minutes for medium rare. Let it rest for 5-10 minutes.
- Spread the Gorgonzola Sauce over the baked flatbread, leaving a 1" border. Bake for an additional 5-7 minutes until bubbly.
- Top the pizza with arugula, sliced filet mignon, and pickled onions. Optionally, garnish with grated parmesan and serve.
