Steak, Shallot, and Blue Cheese Flatbread

Instructions
- Combine yeast, water, and sugar in a small bowl and let sit until foamy.
- Mix the yeast mixture with flour in a stand mixer, adding one cup at a time.
- Add kosher salt and knead the dough until it pulls away from the sides.
- Coat a bowl with olive oil and place the dough inside, flipping it to coat.
- Cover and let the dough rise in a warm place for one hour.
- For the sauce, blend chopped tomatoes, olive oil, and garlic until mostly smooth.
- Preheat the oven to 425°F.
- Punch down the risen dough and divide it into four sections.
- Roll out one section to about 1/8 inch thick.
- Spread the sauce on the dough and layer with cheese, shallots, spinach, filet, blue cheese, and mozzarella.
- Lightly coat the outer crust with olive oil and bake for 12-15 minutes until the cheese is bubbly.
- Let it cool for a couple of minutes before slicing and serving.
