Steak, Shallot, and Blue Cheese Flatbread

Ingredients

Dough

  • 1 package instant yeast
  • 1 cup warm water
  • ½ tsp packed brown sugar
  • 3 cups all-purpose flour
  • 1 Tbsp kosher salt
  • ½ Tbsp olive oil

Sauce

  • 2 tomatoes chopped
  • ½ Tbsp good olive oil
  • 1 large clove garlic
  • to taste salt and pepper

Flatbread Construction

  • ¼ cup homemade sauce
  • ½ cup provolone/mozzarella blend
  • 2 Tbsp shallots, minced
  • 1 cup fresh spinach, lightly packed
  • 5 oz medium rare filet, thinly sliced
  • ¼ cup blue cheese crumbles
  • 2 oz fresh mozzarella, shredded

Instructions

  1. Combine yeast, water, and sugar in a small bowl and let sit until foamy.
  2. Mix the yeast mixture with flour in a stand mixer, adding one cup at a time.
  3. Add kosher salt and knead the dough until it pulls away from the sides.
  4. Coat a bowl with olive oil and place the dough inside, flipping it to coat.
  5. Cover and let the dough rise in a warm place for one hour.
  6. For the sauce, blend chopped tomatoes, olive oil, and garlic until mostly smooth.
  7. Preheat the oven to 425°F.
  8. Punch down the risen dough and divide it into four sections.
  9. Roll out one section to about 1/8 inch thick.
  10. Spread the sauce on the dough and layer with cheese, shallots, spinach, filet, blue cheese, and mozzarella.
  11. Lightly coat the outer crust with olive oil and bake for 12-15 minutes until the cheese is bubbly.
  12. Let it cool for a couple of minutes before slicing and serving.
