Instructions
- Scrub the beets clean and place them in a steamer basket.
- Steam the beets for about 30 minutes or until they are tender all the way through.
- Once cool enough to handle, rub the skins off the beets and cut them into small bite-sized pieces.
- Toss the beet pieces with sherry vinegar, olive oil, salt, and pepper.
