Ingredients

  • 2 large zucchini
  • 2 large eggs
  • 2 cups panko bread crumbs
  • ½ cup parmesan cheese, finely grated
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven to 200C/400F and line a baking sheet with parchment paper.
  2. Slice the zucchini into thin matchsticks.
  3. In a bowl, whisk the eggs until combined.
  4. In another bowl, mix the breadcrumbs, parmesan cheese, salt, and pepper.
  5. Dip the zucchini strips in the egg mixture, then coat them in the breadcrumb mixture.
  6. Place the coated zucchini on the lined baking sheet.
  7. Bake for 22-25 minutes, turning regularly for even crispness.
  8. Remove from the oven and serve immediately.
