Instructions
- Preheat the oven to 200C/400F and line a baking sheet with parchment paper.
- Slice the zucchini into thin matchsticks.
- In a bowl, whisk the eggs until combined.
- In another bowl, mix the breadcrumbs, parmesan cheese, salt, and pepper.
- Dip the zucchini strips in the egg mixture, then coat them in the breadcrumb mixture.
- Place the coated zucchini on the lined baking sheet.
- Bake for 22-25 minutes, turning regularly for even crispness.
- Remove from the oven and serve immediately.
