Ingredients

The Zucchini Fries

  • 3 medium zucchini
  • ½ cup Panko breadcrumbs
  • cup white whole wheat flour or all-purpose flour
  • ¼ cup finely grated Parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 2 large egg whites
  • to taste spray nonstick cooking spray

The Basil Dipping Sauce

  • ½ cup non-fat plain Greek yogurt
  • 2 tablespoons chopped fresh basil or ½ teaspoon dried basil
  • 1 clove minced garlic
  • ¼ teaspoon Worcestershire sauce
  • teaspoon kosher salt
  • teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425°F and coat a baking sheet with nonstick spray.
  2. Pat the zucchini spears dry with paper towels.
  3. In a shallow dish, mix Panko, flour, Parmesan, salt, onion powder, and pepper.
  4. Whisk the egg whites until foamy in a separate bowl.
  5. Coat zucchini spears in egg whites, then dredge in the Panko mixture.
  6. Arrange the coated zucchini on the baking sheet, ensuring they do not touch.
  7. Lightly spray the zucchini with cooking spray and bake for 10 minutes.
  8. After 10 minutes, spray again, rotate the pan, and bake for another 10 minutes.
  9. Prepare the basil dipping sauce by mixing all sauce ingredients in a bowl.
  10. Serve the fries immediately with the dipping sauce.
