Instructions
- Prepare the garlic aioli by mixing mayonnaise, garlic, lemon juice, and salt in a small bowl. Cover and refrigerate for at least 30 minutes.
- Cut the zucchini in half and then into sticks approximately ½-inch thick and ¾-inch long. Sprinkle salt over the zucchini and let it sweat for 30 minutes.
- After sweating, blot the zucchini with paper towels to remove excess moisture.
- Preheat the air fryer to 400°F.
- In one bowl, mix together the breadcrumbs, parmesan, Italian seasoning, garlic powder, salt, and pepper.
- In another bowl, whisk the eggs until pale in color.
- Dip each zucchini fry in the egg mixture, then coat with the breadcrumb mixture. Place on a plate.
- Spray the air fryer basket with cooking spray and arrange the zucchini fries in a single layer. Spray the tops with cooking spray.
- Air fry for 10 minutes, flip the fries, and air fry for another 5 minutes until crispy.
- Serve warm with the garlic aioli and other desired dipping sauces.
