Ingredients

Crepes

  • ½ cup all-purpose flour
  • 1 large egg
  • cup milk
  • ¼ cup water
  • 1 tablespoon unsalted butter
  • 1 tablespoon sugar
  • ¼ teaspoon vanilla
  • teaspoon salt

Toppings

  • ½ cup strawberries
  • ¼ cup blueberries
  • 1 cup cream cheese whipped cream
  • 1 cup whipped cream
  • to taste strawberry syrup

Instructions

  1. Blend all crepe ingredients until mixed and let the batter rest in the refrigerator for 1 hour.
  2. Heat an 8-inch skillet over medium heat and grease it with butter.
  3. Pour batter into the hot pan while gently rotating it to coat the surface evenly.
  4. Cook until the edges curl and the crepe loosens, then flip and cook for about 10 seconds.
  5. Stack the cooked crepes on a parchment-lined baking pan.
  6. Spread whipped cream over half of a warm crepe, add strawberries and blueberries, then fold and drizzle with syrup.
  7. Serve 2 stuffed crepes per person.
