Instructions
- Preheat the grill to medium-high heat, about 375-400°F.
- In a large bowl, toss the sliced sweet potatoes with canola oil until coated.
- Grill the sweet potato slices for 4 minutes on each side.
- Grill the green onions for 2-3 minutes on each side until slightly charred, then chop them.
- Combine the grilled sweet potatoes, chopped green onions, and diced bacon in a large bowl.
- In a small bowl, whisk together minced garlic, whole grain mustard, Dijon mustard, honey, lemon juice, apple cider vinegar, olive oil, salt, and pepper.
- Drizzle the dressing over the sweet potatoes and toss gently to coat before serving.
