Ingredients

The salad

  • 4 pieces sweet potatoes, sliced into ¼” rounds
  • 2 tablespoons canola oil
  • 5 strips bacon, cooked and diced
  • 6 pieces green onions

The dressing

  • 1 clove garlic, minced
  • 1 tablespoon whole grain mustard
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the grill to medium-high heat, about 375-400°F.
  2. In a large bowl, toss the sliced sweet potatoes with canola oil until coated.
  3. Grill the sweet potato slices for 4 minutes on each side.
  4. Grill the green onions for 2-3 minutes on each side until slightly charred, then chop them.
  5. Combine the grilled sweet potatoes, chopped green onions, and diced bacon in a large bowl.
  6. In a small bowl, whisk together minced garlic, whole grain mustard, Dijon mustard, honey, lemon juice, apple cider vinegar, olive oil, salt, and pepper.
  7. Drizzle the dressing over the sweet potatoes and toss gently to coat before serving.
