Ingredients

Crust

  • 20 pieces Oreo cookies
  • 3 tablespoons unsalted butter

Filling

  • 1 ⅓ cups granulated sugar
  • 4 large eggs
  • 8 ounces bittersweet chocolate
  • 2 teaspoons vanilla extract
  • 10 tablespoons unsalted butter
  • 1 ⅓ cups heavy cream
  • 4 teaspoons granulated sugar

Topping

  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and spray a 9-inch deep pie dish.
  2. Pulse the Oreo cookies in a food processor until finely ground, then mix with melted butter and press into the pie dish.
  3. Bake the crust for 10 minutes, then let it cool.
  4. Melt the chocolate using a double boiler or microwave, then let it cool slightly.
  5. In a saucepan, whisk together sugar and eggs, then cook over medium-low heat until it reaches 165°F.
  6. Remove from heat and mix in the melted chocolate and vanilla until smooth, then cool slightly.
  7. Beat the butter until fluffy, then gradually add the chocolate mixture and beat until light and fluffy.
  8. Whip the cream with sugar until stiff peaks form, then fold into the chocolate mixture.
  9. Pour the filling into the cooled crust and smooth the top, then chill for at least 6 hours.
  10. Whip the topping ingredients until stiff peaks form and spread over the pie before serving.
