roughly chopped or shaved or melted into chocolate curls
Instructions
- Melt the chocolate in a microwave-safe bowl, stirring every 20 seconds, and let it cool to room temperature.
- In a stand mixer, cream together the butter and sugar until fluffy.
- Gradually add the cooled chocolate to the butter and sugar mixture, then add the espresso powder if using.
- Switch to the whisk attachment and add one egg, beating for 5 minutes on medium speed. Repeat with the remaining eggs, beating for 5 minutes after each addition.
- Pour the filling into the pre-baked pie shell and spread evenly. Refrigerate for at least 2 hours or until chilled.
- Top with whipped cream and garnish with chocolate shavings or curls before serving.
