Ingredients

The filling

  • 4 oz bittersweet or semisweet chocolate
  • 1 cup salted butter, softened
  • 1 ½ cups ultra-fine sugar
  • 1 tsp vanilla extract
  • 4 large eggs, room temperature
  • ¼ tsp espresso powder (optional)

The crust and toppings

  • 1 9-inch fully pre-baked pie shell
  • 3 cups whipped cream
  • 1 chocolate bar roughly chopped or shaved or melted into chocolate curls

Instructions

  1. Melt the chocolate in a microwave-safe bowl, stirring every 20 seconds, and let it cool to room temperature.
  2. In a stand mixer, cream together the butter and sugar until fluffy.
  3. Gradually add the cooled chocolate to the butter and sugar mixture, then add the espresso powder if using.
  4. Switch to the whisk attachment and add one egg, beating for 5 minutes on medium speed. Repeat with the remaining eggs, beating for 5 minutes after each addition.
  5. Pour the filling into the pre-baked pie shell and spread evenly. Refrigerate for at least 2 hours or until chilled.
  6. Top with whipped cream and garnish with chocolate shavings or curls before serving.
