Ingredients

  • 1 egg egg
  • 1 cup Smooth Natural Peanut Butter
  • ¼ cup brown sugar
  • 1 tsp vanilla
  • 1 cup Gluten Free Quick Cooking Oats
  • 1 tsp Baking Powder
  • ¼ cup Water (if needed)
  • ½ cup Mini Chocolate Chips
  • pinch sea salt (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Combine peanut butter, egg, brown sugar, and vanilla using a mixer or whisk.
  3. Add oats, baking powder, and water if necessary to form a dough.
  4. Roll the dough into golf ball-sized balls and place on a parchment-lined cookie sheet.
  5. Flatten the cookies as they will not spread during baking.
  6. Sprinkle with sea salt if desired.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Store in an airtight container for up to 2 weeks.
