Ingredients

The sauce

  • ½ cup Whole30-compatible mayonnaise
  • 3 tablespoons Whole30-compatible ketchup
  • 2 tablespoons dill pickle relish
  • 1 tablespoon coconut aminos
  • ½ teaspoon white vinegar
  • 2 teaspoons maple syrup

The lettuce buns

  • 1 small-medium head iceberg lettuce

The burgers

  • 3 teaspoons avocado oil
  • 2 medium white onions
  • ¾ teaspoon sea salt
  • 1-3 tablespoons water
  • ½ pound lean ground beef
  • ¼ cup yellow mustard
  • 8 pieces dill pickle chips
  • 2 slices ripe tomato

Instructions

  1. Prepare the sauce by mixing mayonnaise, ketchup, relish, coconut aminos, vinegar, and maple syrup in a bowl and refrigerate.
  2. Prepare the lettuce buns by cutting the iceberg lettuce into wedges and removing the middle part to create 'buns'.
  3. Heat avocado oil in a skillet and caramelize the chopped onions with salt over medium-low heat for about 30 minutes.
  4. Shape the ground beef into thin patties and season with salt and pepper.
  5. Heat a cast-iron skillet, add the patties, and brush mustard on one side. Cook until browned, then flip and cook briefly on the other side.
  6. Assemble the burgers by spreading sauce on the lettuce bun, adding pickles, tomato, and the burger patties, then top with caramelized onions and another lettuce bun.
  7. Wrap the assembled burgers in parchment paper or foil and serve.
