Ingredients

The burgers

  • 1 lb ground beef
  • 1 tbsp ghee (or coconut oil for dairy free)
  • to taste none salt and pepper

The toppings and bun

  • 1 none onion, sliced into rings
  • 1 tbsp ghee (or coconut oil for dairy free)
  • 1 none tomato, sliced
  • 1 none dill pickle, sliced into rounds
  • 1 head iceberg lettuce

The sauce

  • 2 tbsp tomato paste
  • 1 tbsp white vinegar
  • 1 tsp mustard
  • 1 tsp coconut aminos
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ cup mayo
  • 1 small dill pickle, finely diced

Instructions

  1. Make the sauce by combining all sauce ingredients in a bowl and whisking well. Refrigerate while preparing the burgers.
  2. Form the ground beef into very thin burger patties, about ¼ inch thick. Season with salt and pepper.
  3. Slice the onion and heat a skillet over medium-low heat with 1 tbsp of ghee. Cook the onion until browned and caramelized, about 15 minutes.
  4. Prepare the toppings by cutting the iceberg lettuce into quarters and removing the thick inner pieces, leaving the outer leaves.
  5. Heat a grill or skillet over medium-high heat and add 1 tbsp of ghee. Cook the burger patties for 3-4 minutes per side until cooked to your liking.
  6. Assemble the burgers by placing half of a lettuce wedge on a plate, adding a tomato slice and pickles, then topping with a burger patty and sauce. Add onions and more sauce if desired, then top with the other half of the lettuce wedge.
