Ingredients

Dough

  • 1 cup whole milk
  • 1 Tablespoon active dry yeast
  • cup granulated sugar
  • 2 large eggs
  • 6 Tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 4 cups all-purpose flour
  • 1-2 quarts vegetable oil

Topping

  • 3 Tablespoons unsalted butter
  • ½ cup pure maple syrup
  • 1 and ¾ cups sifted confectioners’ sugar
  • teaspoon salt
  • ¼ teaspoon maple extract (optional)
  • 12 slices cooked bacon

Instructions

  1. Prepare the dough by whisking warm milk, yeast, and sugar, then let it sit until frothy.
  2. Add eggs, butter, vanilla, nutmeg, salt, and flour, then mix until the dough comes together.
  3. Knead the dough for 5-7 minutes until soft and slightly tacky.
  4. Let the dough rise in a greased bowl for 1.5-2 hours until doubled in size.
  5. Punch down the dough, roll it out to ½ inch thick, and cut into doughnuts.
  6. Line baking sheets with parchment paper and let the doughnuts rest while heating oil.
  7. Heat oil to 375°F (191°C) and fry doughnuts in batches for 1 minute on each side.
  8. Make the icing by melting butter and maple syrup, then whisk in confectioners’ sugar and salt.
  9. Dip warm doughnuts in icing and top with bacon.
