Instructions
- Preheat the oven to 350°F.
- In a stand mixer, combine coconut oil, sugar, and vanilla extract, and blend until smooth.
- Add pumpkin puree and blend until incorporated.
- Add white whole wheat flour, pumpkin pie spice, salt, baking powder, and baking soda, and blend until all dry ingredients are incorporated.
- Add dark chocolate chips and blend until evenly distributed.
- Scoop dough onto a baking sheet.
- Bake for 10-12 minutes until a toothpick comes out clean or desired crispiness is achieved.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
