Ingredients

  • ¾ cup coconut oil
  • ½ cup brown sugar
  • ½ cup sugar
  • ¾ cup pumpkin puree
  • ½ teaspoon vanilla extract
  • 2 ¼ cups white whole wheat flour
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 10 oz dark chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a stand mixer, combine coconut oil, sugar, and vanilla extract, and blend until smooth.
  3. Add pumpkin puree and blend until incorporated.
  4. Add white whole wheat flour, pumpkin pie spice, salt, baking powder, and baking soda, and blend until all dry ingredients are incorporated.
  5. Add dark chocolate chips and blend until evenly distributed.
  6. Scoop dough onto a baking sheet.
  7. Bake for 10-12 minutes until a toothpick comes out clean or desired crispiness is achieved.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
