Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Melt the butter in a medium pot over medium heat, then remove from heat.
- Chop the baking chocolate into various sizes and set aside.
- Combine the melted butter with brown sugar, granulated sugar, and pumpkin puree, stirring until well mixed.
- Whisk in the egg yolk until evenly distributed.
- In a separate bowl, mix together the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- Add half of the dry mixture to the wet ingredients, stirring until combined, then add the remaining dry mixture.
- Fold in the chocolate chips and chopped chocolate.
- Scoop 1-ounce portions of dough onto the prepared baking sheet, leaving 3 inches between each.
- Bake for 9-11 minutes until edges are set, then transfer to a cooling rack.
