Ingredients

The base

  • 6 whole wheat English muffins
  • 4 whole eggs
  • 2 tablespoons milk
  • ¼ teaspoon kosher salt
  • 10 dashes Tabasco sauce

The toppings

  • 12 slices thin deli ham
  • ¾-1 cup shredded cheese (cheddar or pepper jack)
  • to taste chopped vegetables (green onions, tomatoes, olives, mushrooms, green peppers, etc.)

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and non-stick spray.
  2. In a pie plate, whisk together the eggs, milk, salt, and Tabasco sauce.
  3. Gently pull apart each English muffin and soak each side in the egg mixture.
  4. Place the soaked muffins cut side up on the baking sheet.
  5. Add ham or crumbled bacon on top of each muffin, followed by any additional toppings and cheese.
  6. Bake in the preheated oven for 15 minutes and serve immediately.
