Ingredients

The batter

  • 2 cups milk
  • 1 envelope active dry yeast
  • 8 tablespoons butter
  • 1 tablespoon honey
  • ½ teaspoon pure vanilla extract
  • 2 ½ cups whole-wheat pastry flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 eggs eggs
  • ½ cup club soda

Suggested toppings

  • to taste homemade whipped cream
  • to taste pure maple syrup
  • to taste berries

Instructions

  1. Warm 2 cups of milk to between 100 and 110 degrees F and sprinkle in the yeast.
  2. Let the yeast stand for 5 to 10 minutes until it foams.
  3. Melt the butter, honey, and vanilla together in a bowl.
  4. In a large bowl, whisk together flour, cinnamon, and salt, then make a well in the center.
  5. Gently whisk in the eggs, then add the seltzer water and whisk until foamy.
  6. While whisking, pour in the melted butter mixture and the milk mixture, stirring until smooth.
  7. Cover and let the batter rise at room temperature for 1 to 2 hours or refrigerate overnight.
  8. Cook the batter in a waffle iron according to manufacturer's instructions.
  9. Serve with whipped cream, maple syrup, and fresh berries.
