Instructions
- Warm 2 cups of milk to between 100 and 110 degrees F and sprinkle in the yeast.
- Let the yeast stand for 5 to 10 minutes until it foams.
- Melt the butter, honey, and vanilla together in a bowl.
- In a large bowl, whisk together flour, cinnamon, and salt, then make a well in the center.
- Gently whisk in the eggs, then add the seltzer water and whisk until foamy.
- While whisking, pour in the melted butter mixture and the milk mixture, stirring until smooth.
- Cover and let the batter rise at room temperature for 1 to 2 hours or refrigerate overnight.
- Cook the batter in a waffle iron according to manufacturer's instructions.
- Serve with whipped cream, maple syrup, and fresh berries.
