Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups buttermilk
  • ½ cup milk
  • 6 Tbsp vegetable oil
  • ½ tsp vanilla extract
  • 2 large eggs (whites and yolks separated)
  • 3 Tbsp granulated sugar

Instructions

  1. Preheat the oven to 200°F and the waffle iron.
  2. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt, then make a well in the center.
  3. In another bowl, whisk together buttermilk, milk, vegetable oil, vanilla extract, and egg yolks.
  4. In a separate bowl, whip egg whites until soft peaks form, then add sugar and whip until stiff peaks form.
  5. Pour the buttermilk mixture into the well of the flour mixture and mix until just combined.
  6. Fold in the whipped egg whites gently.
  7. Cook the batter in the preheated waffle iron according to the manufacturer's directions.
  8. Transfer cooked waffles to the warm oven to keep warm and crisp before serving.
