Instructions
- Preheat the oven to 200°F and the waffle iron.
- In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt, then make a well in the center.
- In another bowl, whisk together buttermilk, milk, vegetable oil, vanilla extract, and egg yolks.
- In a separate bowl, whip egg whites until soft peaks form, then add sugar and whip until stiff peaks form.
- Pour the buttermilk mixture into the well of the flour mixture and mix until just combined.
- Fold in the whipped egg whites gently.
- Cook the batter in the preheated waffle iron according to the manufacturer's directions.
- Transfer cooked waffles to the warm oven to keep warm and crisp before serving.
