Instructions
- Melt the butter and coconut oil together, then mix in the coconut milk and sprinkle the yeast over it.
- Whisk in the egg yolk and vanilla, then let it sit for five minutes.
- In a separate bowl, combine the whole wheat flour and salt, then pour in the butter mixture and stir.
- Whip the egg whites until stiff peaks form and fold them into the batter along with the chocolate chips.
- Cover the batter and let it rest for 15-30 minutes or overnight in the fridge.
- Prepare the bananas by heating coconut oil in a skillet, slicing the bananas, and cooking them with brown sugar for a few minutes.
- Preheat the waffle iron and cook the waffles according to the manufacturer's instructions until golden brown.
- Serve the waffles with vanilla ice cream, warm bananas, powdered sugar, and maple syrup.
