Ingredients

The Waffles

  • 4 tablespoons butter
  • 4 tablespoons coconut oil
  • 2 cups coconut milk
  • 1 ½ teaspoons active dry yeast
  • 2 large eggs (whites + yolks separated)
  • 2 teaspoons vanilla extract
  • 2 cups whole wheat pastry flour
  • ½ teaspoon salt
  • ½ - ¾ cup mini semi-sweet chocolate chips
  • to taste various vanilla ice cream, powdered sugar, fresh berries, and maple syrup (for serving)

Coconut Bananas

  • 3 large bananas
  • 1 tablespoon coconut oil
  • ½ tablespoon brown sugar
  • ¼ cup coconut rum (optional)

Instructions

  1. Melt the butter and coconut oil together, then mix in the coconut milk and sprinkle the yeast over it.
  2. Whisk in the egg yolk and vanilla, then let it sit for five minutes.
  3. In a separate bowl, combine the whole wheat flour and salt, then pour in the butter mixture and stir.
  4. Whip the egg whites until stiff peaks form and fold them into the batter along with the chocolate chips.
  5. Cover the batter and let it rest for 15-30 minutes or overnight in the fridge.
  6. Prepare the bananas by heating coconut oil in a skillet, slicing the bananas, and cooking them with brown sugar for a few minutes.
  7. Preheat the waffle iron and cook the waffles according to the manufacturer's instructions until golden brown.
  8. Serve the waffles with vanilla ice cream, warm bananas, powdered sugar, and maple syrup.
