Ingredients

The main ingredients

  • 1 lb fresh or frozen raw shrimp, peeled and deveined
  • ¾ lb fresh green beans, ends trimmed
  • ½ cup coconut aminos
  • cup honey
  • 6 cloves garlic, minced
  • tablespoons lemon juice
  • 1 tablespoon toasted sesame oil
  • ¼ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • 2 tablespoons cornstarch or arrowroot powder

Optional garnishes

  • 2 tablespoons sliced green onions
  • 1 pinch red pepper flakes
  • 1 pinch sesame seeds

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Mix coconut aminos, honey, garlic, and lemon juice in a bowl and whisk until combined. Marinate shrimp with half of the mixture.
  3. Toss green beans with sesame oil, salt, and pepper, then spread them on the baking sheet and roast for 12 minutes.
  4. Add marinated shrimp to the baking sheet and roast for an additional 8-10 minutes.
  5. Simmer the remaining sauce in a saucepan, then whisk in cornstarch mixed with water until thickened.
  6. Combine cooked shrimp and green beans in a bowl, pour the thickened sauce over, and toss to coat.
