Garlic-Coconut Shrimp and Green Beans

Ingredients

The shrimp

  • 1 lb. large shrimp, peeled, deveined
  • 1 tsp. ground turmeric
  • 1 tsp. Diamond Crystal kosher salt
  • ½ tsp. Morton kosher salt

The garlic-coconut mixture

  • 6 cloves garlic, thinly sliced
  • ¼ cup extra-virgin olive oil
  • 1 cup unsweetened coconut flakes
  • 1 tsp. sugar

The vegetables

  • 1 lb. green beans, trimmed, cut into thirds
  • ¼ tsp. crushed red pepper flakes
  • 2 Tbsp. unseasoned rice vinegar
  • ½ small red onion, thinly sliced

Instructions

  1. 1. Pat the shrimp dry and toss with turmeric and salt. Set aside.
  2. 2. Cook garlic in olive oil over medium heat until golden, then add coconut flakes and cook until golden. Drain and cool, then mix with sugar and remaining salt.
  3. 3. In the same skillet, heat garlic oil and cook green beans and shrimp until shrimp are opaque. Add vinegar and water, cooking until shrimp are done and beans are crisp-tender.
  4. 4. Toss with red onion and the coconut-garlic mixture before serving.
