Garlic-Coconut Shrimp and Green Beans

The garlic-coconut mixture

garlic, thinly sliced

extra-virgin olive oil

unsweetened coconut flakes

The vegetables

green beans, trimmed, cut into thirds

crushed red pepper flakes

unseasoned rice vinegar

red onion, thinly sliced
Instructions
- 1. Pat the shrimp dry and toss with turmeric and salt. Set aside.
- 2. Cook garlic in olive oil over medium heat until golden, then add coconut flakes and cook until golden. Drain and cool, then mix with sugar and remaining salt.
- 3. In the same skillet, heat garlic oil and cook green beans and shrimp until shrimp are opaque. Add vinegar and water, cooking until shrimp are done and beans are crisp-tender.
- 4. Toss with red onion and the coconut-garlic mixture before serving.
