Instructions
- Preheat the oven to 425ºF.
- Rinse the shrimp under cold water and pat dry.
- In a bowl, toss green beans with olive oil, coriander, cumin, salt, black pepper, and cayenne pepper.
- In another bowl, toss shrimp with olive oil, lemon zest, salt, and black pepper.
- Brush a roasting pan with olive oil and arrange the green beans in a single layer.
- Roast the green beans for 10 minutes.
- After 10 minutes, toss the green beans and add the shrimp on top.
- Roast for an additional 8 to 10 minutes until the shrimp are cooked.
- Squeeze lemon over the dish and serve immediately.
