Ingredients

The vegetables

  • 1 lb green beans
  • 1 tbsp extra virgin olive oil
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ¼ tsp kosher salt
  • ½ tsp fresh ground black pepper
  • tsp cayenne pepper

The shrimp

  • 1 lb medium-large raw shrimp
  • 1 tbsp olive oil
  • 1 piece lemon (zest only)
  • ¼ tsp kosher salt
  • ½ tsp fresh ground black pepper

Instructions

  1. Preheat the oven to 425ºF.
  2. Rinse the shrimp under cold water and pat dry.
  3. In a bowl, toss green beans with olive oil, coriander, cumin, salt, black pepper, and cayenne pepper.
  4. In another bowl, toss shrimp with olive oil, lemon zest, salt, and black pepper.
  5. Brush a roasting pan with olive oil and arrange the green beans in a single layer.
  6. Roast the green beans for 10 minutes.
  7. After 10 minutes, toss the green beans and add the shrimp on top.
  8. Roast for an additional 8 to 10 minutes until the shrimp are cooked.
  9. Squeeze lemon over the dish and serve immediately.
