Sausage-Stuffed Baked Zucchini

Ingredients

The zucchini

  • 4 medium zucchinis
  • to taste salt and pepper

The filling

  • ½ lb hot Italian lean turkey sausage
  • ½ cup crumbled feta cheese
  • 2 tablespoons pine nuts
  • 2 tablespoons chopped sun-dried tomatoes
  • 2 tablespoons chopped scallions
  • a pinch dried oregano

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Slice the zucchinis in half lengthwise and scoop out the centers to create 'boats'.
  3. Season the zucchini with salt and pepper and place them hollow side up on the baking sheet.
  4. Cook the sausage in a skillet over medium-high heat until fully cooked, breaking it apart as it cooks.
  5. In a bowl, combine the cooked sausage with feta, pine nuts, sun-dried tomatoes, scallions, and oregano.
  6. Fill the zucchini boats with the sausage mixture and bake for 15-18 minutes until the cheese is melted and the zucchini is tender.
