Instructions
- Preheat the oven to 400°F and prepare a baking sheet.
- Slice the zucchinis in half lengthwise and scoop out the centers to create 'boats'.
- Season the zucchini with salt and pepper and place them hollow side up on the baking sheet.
- Cook the sausage in a skillet over medium-high heat until fully cooked, breaking it apart as it cooks.
- In a bowl, combine the cooked sausage with feta, pine nuts, sun-dried tomatoes, scallions, and oregano.
- Fill the zucchini boats with the sausage mixture and bake for 15-18 minutes until the cheese is melted and the zucchini is tender.
