Ingredients

The chicken

  • 2 Tablespoons Avocado Oil
  • 2 Pounds Boneless, Skinless Chicken Breast or Thighs

The sauce

  • ¾ Cup Chicken Broth or Water
  • ½ Cup Low Sodium Soy Sauce or Coconut Aminos
  • 2 Tablespoons Honey
  • 2 Lemons juiced
  • 1 Lemon zested
  • 4 Cloves Garlic
  • 2 Tablespoons Fresh Ginger
  • ¼ Cup Coconut Sugar
  • ¼ Cup Arrowroot Starch or Tapioca Flour or Cornstarch

For garnishing

  • 1 Teaspoon Sesame Seeds
  • 1 Green Onion sliced

Instructions

  1. Prepare the sauce by whisking together chicken broth, soy sauce, honey, lemon juice, lemon zest, garlic, ginger, coconut sugar, and starch in a bowl.
  2. Heat avocado oil in a pan over medium heat.
  3. Cut the chicken into small pieces and add to the hot oil, cooking until almost done, about 4 minutes.
  4. Pour the prepared sauce over the chicken and cook for an additional 5-6 minutes until the sauce thickens and the chicken is fully cooked.
  5. Adjust seasonings as needed, then serve the chicken over rice, garnished with sesame seeds and sliced green onion.
