Instructions
- Preheat the oven to 350°F and prepare a 24-cup mini muffin tin with non-stick spray and flour.
- In a bowl, whisk together the flour, graham cracker crumbs, salt, and baking soda.
- In a mixer, blend the butter, brown sugar, and granulated sugar until well combined.
- Add the egg and vanilla to the mixture and mix until combined.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Scoop 1 tablespoon of dough into each muffin tin well and let rest for 5 minutes.
- Bake for 7 minutes until the edges are set and the center is slightly under-baked.
- While baking, cut the marshmallows in half and unwrap the Kisses.
- Remove from the oven, quickly add marshmallow halves to each cookie cup, and return to bake for 1 more minute.
- Press a Kiss into the melted marshmallow and let the cookie cups cool before serving.
