Thai Sweet Potato Veggie Burgers

Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- Peel and grate the sweet potato, then place it in a large bowl.
- In the bowl, combine the grated sweet potato with cilantro, basil, garlic, ginger, and chopped peanuts.
- Process the oats in a food processor until they resemble coarse flour, then mix into the vegetable mixture.
- Process the drained chickpeas until finely chopped, then add to the bowl and mix well.
- In a mug, whisk together the ground flax and water to create a flax egg, then stir it into the mixture.
- Add sesame oil, tamari, lime juice, coriander, salt, and pepper to taste, and mix until combined.
- Shape the mixture into 6-8 tightly packed patties and place them on the baking sheet.
- Bake for 20 minutes, flip the patties, and bake for another 15-17 minutes until golden.
- While the patties bake, prepare the peanut sauce by blending all sauce ingredients in a food processor until smooth.
- Let the patties cool for 10 minutes before serving with buns or lettuce, tomato, roasted sweet potato, and peanut sauce.
