Thai Sweet Potato Veggie Burgers

Ingredients

The burgers

  • 1 large sweet potato
  • ½ cup cilantro, finely chopped
  • ¼ cup fresh basil leaves, finely chopped
  • 3 large garlic cloves, minced
  • 2 teaspoons finely grated ginger
  • ½ cup roasted and salted peanuts, finely chopped
  • ¾ cup gluten-free rolled oats, processed into a coarse flour
  • 1 15-ounce can chickpeas, drained and rinsed
  • 2 tablespoons ground flax
  • 3 tablespoons water
  • ½ tablespoon sesame seed oil
  • 1 tablespoon low-sodium tamari (or coconut aminos for soy-free option)
  • 1 teaspoon fresh lime juice
  • 1 teaspoon ground coriander
  • 1 teaspoon fine grain sea salt, or to taste
  • to taste freshly ground black pepper

The peanut sauce

  • 1 clove garlic
  • 6 tablespoons smooth peanut butter (or almond or sunflower seed butter)
  • tablespoons fresh lime juice
  • 2 tablespoons low-sodium tamari (or coconut aminos)
  • 1-2 tablespoons water, as needed
  • ½ tablespoon pure maple syrup (or other sweetener)
  • 1 teaspoon freshly grated ginger
  • teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. Peel and grate the sweet potato, then place it in a large bowl.
  3. In the bowl, combine the grated sweet potato with cilantro, basil, garlic, ginger, and chopped peanuts.
  4. Process the oats in a food processor until they resemble coarse flour, then mix into the vegetable mixture.
  5. Process the drained chickpeas until finely chopped, then add to the bowl and mix well.
  6. In a mug, whisk together the ground flax and water to create a flax egg, then stir it into the mixture.
  7. Add sesame oil, tamari, lime juice, coriander, salt, and pepper to taste, and mix until combined.
  8. Shape the mixture into 6-8 tightly packed patties and place them on the baking sheet.
  9. Bake for 20 minutes, flip the patties, and bake for another 15-17 minutes until golden.
  10. While the patties bake, prepare the peanut sauce by blending all sauce ingredients in a food processor until smooth.
  11. Let the patties cool for 10 minutes before serving with buns or lettuce, tomato, roasted sweet potato, and peanut sauce.
