Fried Eggs

Scrambled Eggs

  • 2 tablespoons extra virgin olive oil
  • 6 eggs eggs
  • ½ teaspoon fine grain kosher or sea salt

Instructions

  1. Heat a large skillet over medium heat and add olive oil until it shimmers.
  2. For fried eggs, crack an egg into a small bowl, then slip it into the pan and cover to prevent splattering.
  3. Cook the egg for 30 to 60 seconds, then remove with a slotted spoon and season to taste.
  4. For scrambled eggs, scramble the eggs in a bowl and season with salt.
  5. Pour the egg mixture into the pan and stir gently with a spatula for 1 to 2 minutes until cooked to your liking.
  6. Remove from heat and serve the scrambled eggs on a warm plate.
