Instructions
- Heat a large skillet over medium heat and add olive oil until it shimmers.
- For fried eggs, crack an egg into a small bowl, then slip it into the pan and cover to prevent splattering.
- Cook the egg for 30 to 60 seconds, then remove with a slotted spoon and season to taste.
- For scrambled eggs, scramble the eggs in a bowl and season with salt.
- Pour the egg mixture into the pan and stir gently with a spatula for 1 to 2 minutes until cooked to your liking.
- Remove from heat and serve the scrambled eggs on a warm plate.
