Ingredients

Creamy Dill Dressing

  • cup mayo
  • cup sour cream
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, finely minced
  • cup fresh dill, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon fresh cracked pepper

Salad

  • 1 head butter lettuce
  • 1 Turkish cucumber sliced
  • ½ fennel bulb thinly sliced
  • 4-6 ounces smoked salmon
  • 1/8-¼ cup thinly sliced red onion
  • 2 tablespoons capers
  • 1 avocado sliced
  • optional sunflower sprouts
  • optional more dill
  • optional Everything Bagel Spice

Instructions

  1. Prepare the dressing by whisking together mayo, sour cream, olive oil, lemon juice, garlic, salt, and pepper, then mix in the dill.
  2. In a large bowl, combine the lettuce, fennel, cucumber, smoked salmon, red onion, and capers.
  3. Toss the salad and add enough dressing to coat, about half of the dressing made.
  4. Adjust seasoning with salt and pepper to taste, then either toss in the avocado and sprouts or use them as a garnish.
