Ingredients

Gingerbread Men

  • ¾ cup flour
  • ¾ cup white whole wheat flour or whole wheat pastry flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ¼ teaspoon salt
  • 6 tablespoons coconut oil at room temperature
  • ¼ cup brown sugar

Gingerbread Granola

  • 3 cups oats
  • 1 cup shredded unsweetened flaked coconut
  • ½ cup candied ginger
  • ½ cup pistachios
  • ½ cup pecans or almond or macadamia nuts
  • 1 cup raw pumpkin seeds (pepitas)
  • ¼ cup toasted wheat germ
  • 1 cup dried cranberries
  • ¼ cup molasses
  • ½ cup pure maple syrup
  • 4 tablespoons coconut oil (melted, may substitute butter)
  • 3 teaspoons instant espresso powder
  • 1 teaspoon cinnamon
  • ¾ teaspoon ginger
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons honey

Instructions

  1. Prepare the gingerbread cookie dough by mixing the dry ingredients in a small bowl.
  2. Cream together coconut oil and brown sugar in a large bowl until light and fluffy, then add molasses and egg yolk.
  3. Gradually mix in the dry ingredients until combined, then roll out the dough and cut into shapes.
  4. Refrigerate the cookie shapes while preparing the granola.
  5. Preheat the oven to 325°F.
  6. In a large bowl, combine oats, coconut, candied ginger, nuts, pumpkin seeds, wheat germ, and cranberries.
  7. Melt coconut oil and mix with molasses and maple syrup, then add espresso powder, cinnamon, ginger, and salt.
  8. Pour the wet mixture over the dry ingredients and stir to combine, then spread on a baking sheet and drizzle with honey.
  9. Bake for 30-40 minutes, stirring every 15 minutes, and drizzle with more honey during the last stir.
  10. Let the granola cool for 5 minutes, then press into a flat slab and let sit for an hour to harden.
  11. Bake the refrigerated cookies until slightly brown, then let cool before mixing with the granola.
