Ingredients

The oatmeal

  • cup old-fashioned rolled oats
  • cup fiber or bran cereal
  • 1 cup water or milk
  • pinch salt
  • ¼ cup egg whites
  • ¼ cup pumpkin puree
  • 1 tablespoon brown sugar
  • to taste pumpkin pie spices

Optional toppings

  • to taste cream, milk, or evaporated milk

Instructions

  1. Combine oats, cereal, water or milk, and salt in a small saucepan and bring to a boil, stirring until the mixture thickens slightly.
  2. Pour in the beaten egg whites while stirring continuously to prevent scrambling.
  3. Mix in pumpkin puree, brown sugar, and spices, then heat until warmed through.
  4. Serve immediately with desired toppings.
