Avocado and Pink Grapefruit Parfait

Ingredients

  • ½ avocado ripe avocado
  • ½ cup 0% fat plain Greek yogurt
  • ¼ cup pasteurized egg whites
  • ½ scoop (20g) vanilla flavored whey protein powder
  • 1 tsp unpasteurized honey
  • ½ cup unsweetened soy milk
  • 1 tbsp black chia seeds
  • 1 tsp pure vanilla extract
  • 1 grapefruit supremed grapefruit

Instructions

  1. Blend all ingredients except the grapefruit until smooth.
  2. Pour one third of the mixture into a serving glass and layer half of the grapefruit on top.
  3. Add another layer of the avocado mixture followed by more grapefruit, and finish with the remaining avocado mixture.
  4. Garnish with yogurt, shredded coconut, and mint leaves if desired.
