Avocado and Pink Grapefruit Parfait

Instructions
- Blend all ingredients except the grapefruit until smooth.
- Pour one third of the mixture into a serving glass and layer half of the grapefruit on top.
- Add another layer of the avocado mixture followed by more grapefruit, and finish with the remaining avocado mixture.
- Garnish with yogurt, shredded coconut, and mint leaves if desired.
