Roasted Garlic Aioli

Ingredients

  • 1 head garlic
  • 1 Tbsp. olive oil
  • a pinch salt
  • a pinch pepper
  • ½ cup mayonnaise
  • 1 tsp. lemon juice
  • ½ tsp. Worcestershire sauce
  • ½ tsp. hot sauce
  • ¼ tsp. black pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the top quarter off the head of garlic to expose the cloves.
  3. Place the garlic head on aluminum foil, exposed side up.
  4. Drizzle the exposed cloves with olive oil and sprinkle with salt and pepper.
  5. Seal the foil around the garlic and roast for 40 minutes.
  6. Once roasted, remove the cloves and mash them with a fork.
  7. Combine the mashed garlic with mayonnaise, lemon juice, Worcestershire sauce, hot sauce, and additional black pepper.
  8. Mix thoroughly and refrigerate for at least an hour before using.
