Garlic Herb Aioli

Ingredients

The aioli base

  • 2 large egg yolks
  • 1 Tablespoon Dijon mustard or honey mustard
  • 2 teaspoons lemon juice
  • ⅓ to ½ cup olive oil

Herbs and spices

  • 2 Tablespoons fresh-chopped herbs (rosemary, oregano, basil)
  • 2 teaspoons minced garlic
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Blend egg yolks, mustard, and lemon juice until creamy.
  2. With the blender running, slowly drizzle in olive oil in a thin stream over about 2 minutes.
  3. Add remaining herbs and spices, and blend for another 20-30 seconds.
  4. Transfer aioli to a bowl and refrigerate for at least 10 minutes before serving.
