Homemade Classic Garlic Aioli

Instructions
- Pulse the ramps (or garlic) with a pinch of salt in a food processor until finely minced.
- Add the capers, egg, and 1 tablespoon of lemon juice, and process until combined.
- With the motor running, slowly pour the oil through the food pusher insert to emulsify.
- Add oil slowly at first, then more quickly once emulsified, adjusting the amount as needed based on the texture.
- Taste the aioli and adjust salt and lemon juice as necessary.
- Store in the fridge until ready to serve.
