Instructions
- Preheat the oven to 400°F and prepare aluminum foil squares.
- Remove the outer peel from the garlic bulb and slice off ¼" from the non-root side.
- Drizzle olive oil on the garlic bulb, wrap it in foil, and bake for 40 minutes.
- Once cooled, squeeze the roasted garlic cloves out or peel them individually.
- In a blender, combine the roasted garlic, mayonnaise, dijon mustard, lemon juice, parmesan, salt, and pepper.
- Blend until smooth, then serve immediately or refrigerate.
