Ingredients

Roasted Garlic

  • 2–3 bulbs garlic
  • 3 teaspoons olive oil

Aioli

  • ½ cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon grated parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare aluminum foil squares.
  2. Remove the outer peel from the garlic bulb and slice off ¼" from the non-root side.
  3. Drizzle olive oil on the garlic bulb, wrap it in foil, and bake for 40 minutes.
  4. Once cooled, squeeze the roasted garlic cloves out or peel them individually.
  5. In a blender, combine the roasted garlic, mayonnaise, dijon mustard, lemon juice, parmesan, salt, and pepper.
  6. Blend until smooth, then serve immediately or refrigerate.
