Ingredients

The salad

  • 3 slices center-cut bacon, diced
  • 3 cups shredded brussels sprouts
  • 4 oz avocado, diced (1 small)

The vinaigrette

  • 1 tsp dijon mustard
  • 4 tsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp red onion, chopped
  • ½ tsp kosher salt

Instructions

  1. Cook the bacon in a large nonstick skillet until crispy, about 7 minutes, then drain on paper towels.
  2. In a small bowl, whisk together the vinaigrette ingredients.
  3. In a bowl, toss the brussels sprouts with the vinaigrette.
  4. Top the salad with avocado and bacon, then serve immediately.
