Ingredients

The vegetables

  • 1 lb. Brussels sprouts, trimmed and halved
  • ¼ small red onion, thinly sliced
  • 4 cloves garlic, minced

The fats and seasonings

  • 1 Tbsp avocado oil
  • to taste sea salt
  • to taste black pepper

The protein

  • 4 slices uncooked sugar-free bacon, thinly sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Place the trimmed Brussels sprouts on a parchment-lined baking sheet.
  3. Add the sliced red onions and minced garlic.
  4. Drizzle with avocado oil and toss to coat.
  5. Sprinkle the uncooked bacon, sea salt, and black pepper over all.
  6. Roast in the oven for 20-30 minutes, stirring halfway through, until the Brussels sprouts are tender and the bacon is cooked through.
  7. Remove from the oven and serve.
