Ingredients

The pork chops

  • 4 pieces center cut pork chops
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 Tbsp extra-virgin olive oil
  • tsp chopped fresh rosemary
  • 3 cloves garlic

The vegetables

  • 1 red bell pepper cut into 1½-inch strips
  • 1 yellow or orange bell pepper cut into 1½-inch strips

The sauce

  • 2 tsp balsamic vinegar

Instructions

  1. Heat a large skillet over medium-high heat and season the pork with salt and pepper.
  2. Add olive oil to the pan and swirl to coat, then add the pork and cook for 7 minutes.
  3. Reduce heat to medium, flip the pork, and add 1 tsp of rosemary, garlic, and bell peppers; cook for 9 minutes until the peppers are tender and the pork is done.
  4. Drizzle with balsamic vinegar and sprinkle with the remaining rosemary before serving.
